I'm trying to go all-digital with my books, and I'm thinking of what takes the shelf space instead of books. I have an old iPhone (not worth enough to sell) that I'd like to have play a slideshow of my book artwork.

Question is: is there an easy way to gather all the artwork and save it outside of iTunes, so I can load them into the phone as photos? I know I can "Get Info" for each book and copy the artwork - hoping there's something faster than that.

It depends on how you got your artwork. If you let iTunes download it, this might not work. If you manually added your artwork, which I always do to get higher quality, this will do the trick.

Doug's AppleScripts for iTunes is a great resource for managing your iTunes tags and files.
