Anywhere but here
This may seem trivial to some of you but I can't seem to figure it out.
On my old mba 13 2010 model, itunes would always launch with one bounce in the dock. On my new 2011 i7 model, itunes always takes between 6-8 bounces at first launch after initial boot.
Strange thing is that all my other apps launch within one or two bounces
 
My library is stored on the local ssd. I do have a usb drive attached though.

I will dismount all external drives and see if this makes a difference.
 
Under lion on my MBA 2010 its nearly instant.

I use Supersync and and external drive to offload movies etc I dont need.

iTunes should load very quickly. Seems that is the case for most people these days. Do you have your iPhone plugged in? Ive noticed that slows down how quickly my iTunes opens. Might just want to try reinstalling iTunes.
