I have checked previous threads and there seems to be lots of little threads covering many of these topics.
At the moment I run a Mac Pro (Leopard) as a server and backup solution for the computers both locally, and over the internet.
The iTunes library is shared locally over AE basestation and a number of AEx allow us to stream music across the house, both extending the range of the b/g network and providing the ability to listen, by using an iPhone / iTouch Remote, to different tracks across the house. i.e. my wife can listen to track A from the Powerbook G4 (streamed from the Mac Pro) in the bathroom while I use the Mac Pro to listen to track B (streamed from it's own library) in the kitchen. Likewise, with two laptops we can also stream combinations of music and video if we so wished. We have to have a b/g network as there are people in the house with legacy hardware - or I would just use n.
Simplify Media on running on the Mac Pro and my iPhone allows for streaming over the web at work through an iPod dock.
Usefully, dot.tunes hookup on Mac Pro and other machines permits me to stream audio and video across the internet to any account set up on it I found this very handy when travelling as with a wifi connection I can cue up the evenings movie by allowing it to stream throughout the day on an iTouch and then connecting to a TV using the video out.
We have a PBook G4 in the living room that can be connected via ethernet to an AE and to our LCD using a DVI - HDMI plus phono for movies / music videos etc. All my DVDs are encoded to play on all formats at a bitrate where the encoding is nt detectable on the LCD, thereby obvious great on the iPhone. They come in at around 2Gb a pop.
DVDs are encoded on HandBrake at:
H.264 bitrate 2500kbps

I would like to be able to create reference movies in QT Pro that I can import into iTunes, that will then detect the hardware pulling the movie - and send the appropriate version. This is particularly relevant when streaming across the www via Dot.Tunes.
I expect that Apple are pulling this all together in an "iTunes Streaming Server" that will wrapped up in Snow Leopard Server and encourage uptake by users like me - who have spiralled into a need for content everywhere! Either that or in their new Home Server.
In the meantime do I put Tiger Server back on the Mac Pro - thereby losing B2MM, but using Remote Desktop. Is there a shareware solution, or is it time to just wait for Apple to get this server released and stop the need for running
