iTunes (Sync/Back Up)

So I still have iTunes on my MacBook.
First of all two questions all I want to do is back it up so I can connect my new phone to restore.
I see it talks about sync and manually manage videos.

How does sync differ from the back up and what does manually manage videos mean?

When you connect your iPhone to the MacBook, it initially does a Backup if the "Backup all data on your iPhone to this Mac" option is selected in the General tab in iTunes>iPhone pane.

Manually manage videos means that you can choose which videos get synced from your Mac to the iPhone rather than have all of them synced. Same applies for photos and music.
