Itunes Sync Problem

I have de-selected all syncing options on the new ipad, however, once i add a movie or music, the automatically syncing options is turned on. When i de-select it once again, all music/movies are deleted from my ipad. I dont have the wifi sycning option turned on either. I appreciate any help
