I have to preface this by saying I have no clue how the really cool magic of syncing iTunes over wifi works but it is a great and necessary tool for me. My laptop will be in one room and I will use splashtop to remotely access it and add or remove movies or music and it works great.

The thing is, why does it have to be on the same wifi network to work? I can use splashtopm from anywhere even using my cell connection. isn't there some way (even jail broken) that could allow this to happen?
 
It works by use of Bonjour. Bonjour uses multicast DNS to locate and connect to devices. It doesn't work very well on devices on different networks or subnets. You can sync your device using any internet connection, but to do so requires extensive setup via a VPN or SSH tunnel and a Bonjour rebroadcaster.
