iTunes won't back up iPhone!

I just noticed that iTunes 9 wasn't backing up my iPhone recently (not since Sept 3, today is Sept 8).

So I upgraded to iTunes 10. Still nothing. I restored my phone. Still nothing.

I don't even get an error message. It just doesn't even try to backup.

So I deleted the itunes.plist - and it offered to make a backup but it would have wiped my phone and had lost all my Playlists.

So I put the old plist back. So I know that's the issue. How do I fix this and keep my playlists and my iphone settings.
