I have a 30 gig iPod with about 2700 songs and an Intel iMac at home with the latest update to iTunes. Everything is configured for Mac. At work I use an XP pro workstation that I recently downloaded iTunes 7 (for windows) on. Can I now (with 7.0) somehow transfer my songs onto my work (windows) computer?

If so can someone link me to the instructions?

It's my understanding that your Windows PC can't see a Mac-formatted iPod, but your Mac should see a PC-formatted iPod just fine. In any case, you'll just need to download a program like Senuti for Mac or iPodRip for Windows, then use that to copy songs from the iPod to the computer.

The new iTunes 7 functionality for transferring songs from iPod to PC is only for those songs which you've purchased from the iTunes Music Store. A third-party solution is still necessary for those songs you've added from other sources.
