iWeb Question

I've created a few websites using iWeb and there doesn't seem to be a way for me to start a NEW site each time - In other words, it forces me to create a "New Site" under the sites that I've already created, so I actually have a list of sites in my left bar of the iWeb screen.

That said, when I publish my chosen website to the folder, I'm forced to publish all of the files, then I have to delete the ones that I don't want to use before I publish it to the web.

So - Is there a way to create NEW websites, using iWeb, and is there a way to retrieve one specific site in my list of 11 sites in iWeb?
