I understand that iWork for iOS is not as full-featured as iWork 09, but when I password-protect a document in Pages or Numbers on my Mac, then open it on my iPad 3, the password is requested, then removed from the document. I am wondering that if iWork for iOS can cope with asking for a password, why is it programmed to then remove it?

I keep patient data in iWork for iOS. While the iPad is locked with a pin, and I have other databases such as HanDBase encrypt data for private patients, I use Numbers for my public hospital time sheet info, which includes names and operation type. It would be nice to be able to protect individual documents in Numbers and Pages for iOS.
