Do you guys think we'll see any improvements with iMessage and a Jailbreak. I'm really thinking of getting rid of my texting plan because the rates are just crazy. Maybe a hack to trick the system to think other phones are on iOS5

It's not going to trick your carrier. iMessage and SMS are two completely different types of communication. Your carrier is going to know you sent an SMS no matter what you do to "trick your phone". Your best bet is to do something like getting a Google Voice number for SMS and then installing the GV SMS Extension.
