I'm looking at buying a used iPhone 4s - it is currently on 5.0.1. I just want to confirm that I can update it to 5.1.1 and jailbreak it? Is 5.1.1 still available for download from Apple?
 
Nope. You will be stuck on 5.0.1. Also, if the SHSH blobs aren't saved for 5.0.1, then you won't even be able to do a fresh restore to 5.0.1.

When jailbroken, you open cydia, and near the top of the main menu it should say something along the lines of "SHSH Saved: 5.0.1" or something like that.

Oh and I forget to mention, yes it is definitely jailbreakable, lol.

The seller sent me this screenshot of his Cydia - does this mean that it is upgradable to 5.1.1? If not, can it be fresh restored and jailbroken to 5.0.1?

That guy is trying to rip you off. He's not selling you an iPhone 4S, he is selling you an iPhone 4. The oldest OS that a 4S can be on is 5.0 yet that guy has 4.3.x blobs...

Damn, good catch! Ok so this one is a no-go... but in general, that's what I'm looking for right? and at the very least I'll be able to restore to 5.0.1 and re-jailbreak it myself.

Yup. As long as the device was restored to 5.0.1 with iTunes, not OTA, and you have the 5.0.1 blobs, you should be able to re restore a 4S to that firmware with redsn0w.
