I am trying to retrieve some deleted text and contacts from my iphone. The phone is jailbroken on the old software since I have been unable to find a hack for the newer software that you dont have to hook your phone to a computer if it dies. I don't want to lose my jailbreak, but I want my text and contacts. Itunes says that when it restores it will update the software is there a way to stop it from updating the software and just restore? I am scared to click on the button just to see what it will do or say. Please help and TIA! I hope this is not confussing.

Did you sync your iphone before you deleted those texts in order to create a backup file that has them included?
You dont need to restore the firmware then.
You can just right click on the iphone icon on itunes and select restore from backup.

I did a backup after the deletion I read online that it could restore stuff that had been deleted because it stored it in a "to be deleted" file. True or no?
