jailbreaking and restoring from backup

Well, I was trying to wait on an untethered jailbreak for 4.2.1, but I'm getting a little impatient so I'm going to go ahead with the untethered.

One question... after jailbreaking, do I have the option to 'restore from backup' or whatever so that I can keep all of my settings, game saves, etc?

Yes you got that option.

If you ever need to take it to the AppleStore for repair do not restore from that backup since once you do, traces of jailbreaking will be part of your backup.
