iPad Jailbroken Ipad: Restore Fresh Setup

I have had my 4.3.3 Ipad 2 jailbroken for weeks. Now I want to restore back to a clean install, and jailbreak again. I saved the SSH from before I jailbroke and I make a backup of the ipad using Itunes. Itunes is asking for an update on the pc, DO I UPDATE IT? How do I do this restore sucessfully and make sure i stay jailbroken.

Following that guide you can restore directly to 4.3.3.
Then you have to visit jailbreakme again and redo the
jailbreak.
