I want to know if the latest java version specifically for osx is supposed to be included in apple software updates or it is something we have to download manually on our own.
I need to run some java apps, so I want to be sure that I have the latest proper version of java for osx and be sure that this java is on top priority to be chosen be java apps on my machine.

Can you help me clear the situation about osx java?
 
Just use the java from software update. That's what you want. If you've updated it (and you're on Snow Leopard) you're at the latest that you should be running.
 
Java for Mac OS X 10.6 Update 2 contains JRE/JDK 6u20, the latest for Snow Leopard, as does the equivalent update for Leopard.
