If i jailbreak (iPhone 4 GSM running 5.0.1) and change my mind, would it be possible to do a back- up of texts, photos, contacts e.t.c. (Personal stuff) and then re- sync it on my restored iPhone, or will all of that disappear, even after a re- sync?

In my experience, all the iTunes data re-syncs just fine. But really, you can just leave it jailbroken and not use the jailbroken features until the next software update, and that will wipe it out.

Thanks for the answer, but I've heard that just updating the iOs software w/ jailbreak installed will leave a LOT of traces left in the system, is this true?

I have no clue. If there ever is, you could always restore the software, and then restore your stuff from an iTunes backup.
