Hi, I'm a nooB!
I am surprising the wife with an unlocked iPhone 5 for Christmas (purchased unlocked from Apple and not activated yet).
I have a T-mobile nano sim (not activated yet).
Question: Can I simply put the T-mobile sim card in and set up the phone without actually activating the sim yet?
I want to Jailbreak on Dec 22 when the JB comes out and I don't want her to know that I'm doing this. What I'm trying to avoid is interuption to her cell service on her iPhone 3GS that she is currently using. When I turn on the iPhone 5 I can't get past the welcome screen because I haven't inserted the sim card. It keeps asking for a sim card and I don't want to insert it in fear of it going through a whole setup process, rendering her iPhone 3GS useless until she gets her new one.

Yes, you can activate the phone by sticking the sim in.
It doesnt have to be active. Even any old and inactive sims will activate it as long as its a GSM sim.
About the 2nd part of your plan I wouldnt hold my breath about a JB in 8 days.
Its not looking good at all. Noone knows for sure when but it will probably take much longer.
