Just bought SE - Watch OS questions

Hi everyone, I wondered if you could help.

Ive just purchased an Watch SE and wondered what the situation was with regards to what version of Watch OS I should run and whether it will be forced to update to watch OS 8.

I currently run an iPhone 12 on iOS 14 and don’t want to update to 15 yet. Am I able to stay on Watch OS 7, or will it throw Watch OS 8 straight at me?

WatchOS 8 requires iOS 15 - so for so long as you remain on iOS14 you won't see WatchOS 8
