I have used both a SATA/External temp sensor adapter and Fan Control SW on Macs, and I recommend just use the external temp sensor and not worry about it.
It takes about 5 minutes to install and you never have to think about it ever again.
How would I short out the sensor cable? If I do this that the Mac will not think there is any heat coming from the hard drive so why would I need a fan Control?

1. Bend a paper clip to an U-shape and stick the 2 heads to the 2 holes connected to the wires.
2. Cut open the 2 wires and twist/solder them together.
3. Or just let them be and use Mac Fan Control.
In 3. above, the HDD fan will be noisy at boot, but after Mac Fan Control is loaded, it will be quiet again.
