I just barely jumped back on the Jailbreak bandwagon. I sold my Touch about two months after they released. I just recently bought an 8gig and Pwned it as they call it now. I just sold that and now have a 16gig and am ready to roll. Everything has changed since the 1.1.1 days!
Some apps I have come across as necessary for a "survival" as far as Jailbreaking goes. Get OpenSSH, this app has always been one of the most important apps, it allows you to transfer files to and from your Mac and Touch.
Another important program to download is Winterboard, this is the new "Summerboard" I have been told. I do miss Summerboard but I heard they are charging for it now(?). You can apply themes that you download from Cydia/Installer and from the internet that you can transfer over to your iPod.
These are the only apps that I have on top of the default installation of QuickPwn.
