I have just sold my 8GB iphone (£200 for anyone interested) and wondered what I have to do to it before I send it away.

Is it just a case of taking out the sim and going into the settings and clicking on "Reset all settings" is there anything else I should do before sending it away?

Restore the iPhone in iTunes.

Then hit erase / reset all (or w/e it is in settings)

Then take out your SIM and it's good to go.
 
Actually you should probably erase all content and settings then manually sync a large playlist (NO contacts, addresses, calenders, etc... just music,videos...)to fill up then erase again.

Repeat this process about 2-3 times if you want to fully erase your personal data off of your iphone. Otherwise it can be retrieved.
