have Mac connected to monitor using an anker wireless keyboard and mouse, how do I change the settings so it works the same as on the laptop keyboard?

It’ll be your keyboard settings, what you’ve described are set to UK rather than US. There’ll be some setting in the keyboard to change the layout to US.

Sorry I can’t be more specific, don’t have a Mac to hand, but it’s definitely that.
