Keep or Remove Cellular when Pairing with New Phone?

I am upgrading to the new iPhone 12 and have to trade in my old phone. As such, I plan to unpair the watch in advance and repair it to the new phone upon receipt. Do I select to keep or remove cellular plan when I unpair it?

The actual carrier/plan will not change. The watch will just be re-paired to a new phone.

You can also keep your cellular plan if and when you get a new Watch (e.g. when I moved from Series 3 to Series 5). It's a simple and seamless experience.
