I am keeping my Apple Watch 6 for now but maybe the Apple Watch Ultra in the future soon.

When I upgrade my iPhone do I need to redo my watch ?

I will be starting fresh.
 
I believe you need to redo, tho watch app also include an option for “pairing with an existing watch” that’s tied to your account nowadays. But without pairing Apple Watch Won’t work so.

If you transfer data from phone to phone you won’t have to do anything. The watch syncing will come over.
