Is there a keyboard toggle for backlighting on the MacBook Pro that I'm hitting accidentally? Every so often I notice there's no backlighting and I go to the keyboard preferences and backlighting is unchecked. So I turn it back on, and a few days later it is spontaneously unchecked again.

???
 
If you press the F5/F6 keys it will turn that back on (these are the keys which control backlight intensity)
 
If you turn the brightness of the keyboard all the way down, using the F5 key, it will uncheck that box. You can also set a timer to turn it off when the computer is not used for a specified period of time.
 
Is there anyway to override the light sensor and have the keyboard lights on all the time?

Sometimes with a dim table lamp, there's not enough light to see the keys.

I want to say its in keyboard settings but don't quote me (well don't blame me haha). My back lit keyboard is on anytime I turn it on after I selected some setting. That or Caffeine is effecting it.

Caffeine doesn't affect keyboard backlighting.
 
Oh but caffeine does affect the lighting
With just one bathe of caffeine the lighting could be off permanently ;)
For that matter, decaf would do the same! :) However, the Caffeine app doesn't affect keyboard backlighting.
