I know that there is a keyboard shortcut preference panel and that I can add or edit some shortcuts. But is there any software that pools all the shortcuts from all my applications and displays them. And then from there I could edit them. Is this even possible?

Only because I have no idea how to help you I am going to suggest that you try to search the forum to see if there is a solution out there... or you could wait for some kind soul who knows the answer comes along.
