keyboard shortcuts... how to edit?

Hello,

How do i control my keyboard shortcuts?

Currently, when i press apple control and escape, for example, i suddenly restart my computer...! how do i set that (or any other keyboard command) to just shut down the screens? .... for instance...

the keyboard in the system pref's don't seem to cover it...
