By custom keys I mean more than just the F and media keys.
I love the apple keyboard but at work I have a Dell and when I come home I just cannot type, so I'm looking to get another keyboard.
Using a PC at work means using the ctrl key and when I use my mac I am always not copying things because I am holding that key. Is there a keyboard that would let me customize them, so I could sap the cmd key to be the ctrl?
 
If I understand you correctly, you should be able to remap keys to your needs in the system prefs pane.
 
SharpKeys is your answer. :)

You can always registry hack it. However, there is a program called SharpKeys that makes the whole process easier on Windows operating system. Very easy to remap any keys upto 104 keyboard layout :D.
