Keychain Access Last Opened?

Is their any way to tell when Keychain Access was last opened and if any items were selected?

You could check the Console for hints.

Yes thank you for that, didn't see anything related to the keychain so thats a good sign.

Opening the Keychain and even viewing passwords stored there does not create any console log entries.
