Keychain questions/help

I've only just come to realise how keychain can be a good tool. However there are a few things that I cant quite work out.

Is there a way to make it so that you enter a single password (your keychain password) when you come to a web form/login that only after entering that password will fill the user/pass out. That way if you don't want the forms auto filled it you can click cancel.

Also not everything seems to be saving to keychain on its own after logging in. Is there a way to reset the settings so that it asks me again?

ok, I may have worked out the first part... but this doesn't work for everything e.g hotmail

Is this a feature of keychain or am I getting it wrong?
