In PowerPoint, you can have each individual bullet point come in as you click the mouse, and then dim or go away completely when the next one comes in. How do you do this in Keynote? I played around but didn't find it.

In Keynote 3 (in iWork 06) you can do individual build-ins/outs of separate bullets as you describe. It's in the inspector window, under the build/animation panel.
