Today I was messing around in Keynote 3, playing with a theme (KeynotePro.com's Flux) and experimenting with graphs. I noticed that when I went to change the theme back to the parchment theme, it did something weird and blended the theme's together. I tried several other stock themes as well, and here are some of the different colors I got with the graph. I think it's a one-time bug, but I thought I might as well post pictures of it.

I wish I could change the graph colors in themes, as the Parchment theme has two very close colors (dark brown and black) that might be hard to see when they are close to each other. However, I haven't used keynote that much, so maybe there's a way to change the graph colors and I just don't know about it?

Anyways, enjoy Keynote's secret blending mode. ;)

To change colours, just double click on the pie chunk or bar (in a bar graph) open the Inspector (click on the "I") and then click on the fifth tab from the left, entitled "Graphic" and select the colour you want there.
