I want to know how exactly the MBP handles this officially. Last night I copied over 250 Gb from my Windows desktop to my new MBP. This morning, the MBP was in sleep mode. When I woke it back up, it appears that all of the data copied over successfully. So, does the MBP actively monitor what it's doing and keep from going to sleep until the activities are completed?

As far as I know, the MBP will not sleep as long as it is processing anything. That includes copying files, uploading, downloading, etc. Once that is complete, it starts the idle timer, and based on your system preferences, will go to sleep after a certain amount of idle time.
