What are the largest HDD sizes for these models of Mac's?

G4 - Sawtooth

As large a PATA drive as was ever made. But only 128GB is recognized without the Speedtools ATA HiCap driver.

Alternatively, a PCI-SATA card will enable you to use up to about 1TB with APM and as large as they come with GUID partitioning.
 
The Performa 578 would take a SCSI drive (not PATA) - - whatever the largest capacity in 3.5-inch SCSI might be, if you can find one.
Original Perf 578 came with 320 MB SCSI drive.
