Just need some advice before I go for it and order my mac!!!

I only have £1500 to spend max!!

What Im going to be doing is short films and messing around on FCPX, motion and hopefully after effects. No pro work just things to keep me amused but the Mbp I have at the moment just can't cut ( 13" 2.3Ghz dual i5 4G ram)

I know the top spec 27" would be best but which of the other would be best? But would the following still do an ok job?

Base 27" no add ons
21.5" 2.9Ghz model with 16G ram
Base 21.5" with 16G ram and fusion drive

Or are there other options I have not thought of?
 
why don't you get last years model and upgrade the drives? Like 2011, 27 inch, i7, buy after market memory and drives.
 
I agree with itsamacthing. For FCPX and friends you really want as many cores as possible, so get an i7 processor. And the 27" display works wonders. If you can't find a refurbished 2011 27" i7 refurbished, look for one used.

If you do buy a 2012, don't bother with the Fusion drive as the video files will be so big you won't get any advantage to the SSD.
