So, I've been looking around at iMacs, and most of the available last gen ones are the 2.8Ghz model. Are these still good? Graphics-wise, mostly. I know it only has a 2600 PRO, are they still good to use?

Hard to give you an answer since you give no one any clues as to what your going to use the iMac for!

I have the first 2.8 Extreme iMac, and as a graphic designer, I use all the software that is needed to do print media and web pages. Since your asking about the generation after mine, you should have no problems etc.,

Most any version of an intel iMac will work for you.

I've had the 2.8 Extreme iMac for almost a year and half. It continues to be an exceptional machine. It can handle whatever we throw at it (including some gaming in Bootcamp). I feel like I got great value at full retail price so I'd say since you can get it for less it would be a great machine.
