AppleCare on my late 2011 MBP runs out in a week. I have never had a problem with it, but is there anything I should have checked before AppleCare goes away?

If it's a 15 inch one get the graphics card checked. If its a 13 inch there really isn't anything unless your battery has dropped below 80% capacity.

For peace of mind you should just create a GB appointment and have them run their diagnostic at the Bar.. takes about ~10 mins tops.
