I have the 2012 iMac with the 128 gig SSD fusion drive with 1 TB of regular hard drive. I would like to know how can I tell how much is already used up on each of both drives?

The software that runs the fusion drives only allows you to see one entire drive without knowing what is stored where. Just know that your most active programs, (apps you launch frequently), will reside on the SSD portion and the other apps that you use less frequently will reside on the standard drive portion. You will not be able to see with your eyeballs which drive your apps reside on.
 
It is a moving target as the storage changes with your use. I would not worry about the individual use as when (if) the ssd is filled up you will see a performance drop off. Theory suggests the ssd will not fill up until the hdd is full as it should swap off storage until then.
