How do I do this on the phone or in iTunes for the phone? I've got iTunes itself set to 50 songs but the phone still only builds lists of 25.

Any help would be appreciated. Thanks for reading.

As far as I can tell, you have to sync your iPhone first. This will bring the Genius playlists you created on the iPhone into iTunes.

Then in iTunes, they will appear above your Playlists. Click on each one and select "50 Songs" or whichever amount you want.

Then resync.

I hope there's a way to change it on the iPhone though.... anyone?

Wirelessly posted (Mozilla/5.0 (iPhone; U; CPU iPhone OS 2_1 like Mac OS X; en-us) AppleWebKit/525.18.1 (KHTML, like Gecko) Version/3.1.1 Mobile/5F136 Safari/525.20)

There doesn't appear to be a way to change the number of songs in a Genius playlist on the iPhone. It defaults to 25 songs.
