So you want to have say... iTunes start up on boot, and have it be automatically in Space 15? That's easy. So the answer is yes, you can do it. I would recommend looking in the Spaces section of the System Preferences.
 
thanks i guess i have to look harder because i want my windows EMU to start on boot in full screen in a space
