I don't think Apple will change the specs of already released products even if it were possible to do so with just a driver change.
One way to add multiple displays is with DisplayLink but that uses video compression over USB.

To get full speed from the GPU for multiple displays on an original M1 Mac without a miracle from Apple would require something like a video wall processor/splitter but I don't know of any inexpensive ones that can do 5120 width with two displays.

Actually, original M1 Macs do support tiled displays like the LG UltraFine 5K or Dell UP2715K. In that case, all you have to do is make the M1 Mac think that two 1440p displays are two halves of a single dual-tiled 5120x1440 display but that's easier said than done. You have to be able to override the EDIDs somehow. I've never seen anyone try that. It's not as simple as the software EDID override that you can do on Intel Macs. Also, I don't know if M1 Macs support arbitrary dual tiled displays - there currently exists 5120x2880 and 5120x2160 dual tiled displays (I'm not sure if the latter works with M1 Macs) but 5120x1440 is low res enough to not require dual tiles.

(dual tile means it uses a separate DisplayPort signal for each half of the display, one for the left half and one for the right half, which means two 2560x2880 signals in the case of the LG UltraFine 5K)
