Apologies if this has been asked already - couldn't find anything.

When we book our 15 minute try-on appointment between 10th and 24th, what do we get to try on? Do we inform Apple of the options we want to try on and they make sure they have them there, and if so will there be a limit to the numbers of watches they will guarantee are available for trying on in that 15 minute window?

Apparently there's no limit, although you cannot switch the bands around (but instead sample only the pre-assembled variety they have there).

I'm sure each store will have 2 or 3 of each preset model in stock, except for he edition. so its probably just an appointment and you tell them there which one you want to try.

They have a display counter with a variety of watched to try covering all the bands for feel. Pictures are already floating around for this.

I recall, reading somewhere, that you could only try on one watch. How true that is, I don't know. But unless you're getting the top of the line you only have 15 minutes.
