iPod Linux on 5G iPod

I have the latest version of the iPod Video and I need to install linux on it because someone told me you could do voice recording using linux without having to buy an iTalk or one of the iPod specially made microphones but just using a regular computer mic instead (I need to save money!!)
The problem is that it seems that linux doesn't run in 5G iPods, I downloaded the installer but it doesn't recognize my iPod. So it looks like I have to install it "manually" but I'm not so sure about this because I really don't want to ruin my iPod.
So the question is: Have any of you installed Linux on latest version of 5G iPod Video? If so, Is there a 100% safe way of doing it??

Would rockbox be suitable (it is supported)?

Installing it manually should not wreck it ever because its purely software stuff and you can restore it with iTunes at any time.
