hi I recently installed ubuntu 7.04 via bootcamp I was wondering if there is anyway to uninstall it and have 1 big mac os x partition again?

More then likely delete all the partitions using Disk Utility and then using Boot Camp to try to merge the space back in.
I'm surprised that Disk Utility can't erase the partitions. You might need to erase the entire disk for that option. I don't know how well OS X plays with ext2/3.
next question since os x is not playing nice could i boot ubuntu from a live cd delete the partitions so there just free space then boot back into mac os x and use the bootcamp assistant to merge it into 1 partition
