Recently I've upgraded from Leopard to Lion, and now Mail is behaving differently (and I don't like change

Previously, it would download all e-mail as unread, until I would actually read it in Mail. This would happen regardless of whether or not I had already read the e-mail on my phone, for instance.
Now, it closely matches the online record on Gmail: if I read an e-mail on my phone, it downloads the mail as 'read' to Mail. In fact, it works the other way as well: when I tag a 'read' e-mail in Mail as 'unread' (as a reminder to still do something), it also changes the online record in Gmail, meaning that my phone thinks I've got new mail. Quite annoying, actually. How do I separate the two?
