Lion question

I have a 2011 17inch MBP with two hard drives each has a bootable copy of Snow Leopard on it. My question is when Lion comes out next week, can I upgrade on the drives to Lion and leave the other on Snow Leopard, and if the answer is yes will I be able to access and write to the other hard drive weather I am booted into Snow Leopard or Lion.
