Lion/Windows 7 File Sharing

Something weird is going on and I can't seem to figure out why.

I want to share a few folders on my Mac with Windows 7 machines but it'll either share nothing or share the entire Mac (including Macintosh HD and all the system files).

Am I doing something stupid or has Lion changed how it handles file-sharing? This all previously worked fine under SL.
