So it's in all of the new mbp's, however after doing an extensive search it's difficult to find any more documentation about the technology. After reading about past installations of Turbo Boost decreasing the amount of cores active to increase core clock, I'm not sure if that's how the new version works as well. Any one have knowledge on this? Also, if it does that, how does it handle different things under load? Are there ways to manually adjust how many cores are active and the clock speed they are running at?

There is plenty of information about turbo boost. You should check Anandtech for one.
The new version does adjust like the old one except better. Its the whole reason turbo boost exists. You cannot control how it does this on OS X.
