Lock display settings?

I leave my Mac Mini (Late 2012) on in the office when I leave but turn off the monitors. Once I turn off one monitor, all my windows (on multiple desktops) get crowded onto the other monitor.

Is there any way to lock the display settings for a Mac Mini? I'd like it to stick with one set of settings and not auto detect or adjust the display if I have one of my monitors turned off. Is there 3rd party software that does this?
